Team Shinsei

Lynae and Tracy, the owners of FAR Hospitality, were both regulars at the former Yamaguchi’s sushi. They often talked about opening “a little taco stand” together. That “little taco stand” became Shinsei.

Founders

Tracy Rathbun

Lynae Fearing has experienced the best of the best when it comes to culinary expertise, fine-dining, world-class traveling, and renowned restaurants. Growing up, the restaurant industry became a second home for Lynae as she made her way through high school, college and beyond.

It was during this time that she also found her passion for people by engaging over a good glass of wine and great food. When Lynae is not making her rounds at Shinsei, Lovers Seafood, or Dea, she enjoys traveling, yoga, and spending as much time as she can with her two sons, Jaxson and Campbell.

During her travels to Capri, Lynae discovered a divine Genovese pasta that she’s excited to feature on the menu at Dea.

Tracy Rathbun brings with her over 30 years of restaurant and managerial experience. While pursuing her Psychology degree at the University of Texas at Austin she worked her way through school at the Lakeview Café, waiting tables and managing. Upon graduation she moved to Dallas where she was food and beverage manager for the Hyatt Regency.

For the next 14 years she moved from sales to General Sales Manager for Park Place Porsche and Boardwalk Porsche. As you can see, Tracy used her Psychology degree on a very regular basis.

A flawless hostess and avid art collector, Tracy and her husband, Kent enjoy hosting private dinner parties and traveling the world. Her favorite city outside of her hometown , Dallas, Tx is Cape Town South Africa. She and her family are always up for a culinary adventure.

Sushi Chef

Shuji Sugawara

Our “King of Wok” – “Elvis” – is fast becoming one of Dallas’ hottest sushi chefs, if not already a cult icon.

Shuji Sugawara moved to the U.S. to study English and began working in Plano’s authentic Japanese restaurant Nakamoto.

After three years of study under Mr. Soda Takashi, now owner of Sushisake in Richardson, Shuji moved on to work at Anzu on McKinney Ave. The only sushi Chef at the Pacific-rim Cuisine establishment, he further mastered his art.

Four years later found his new opportunity at Tei-Tei Robata Bar on Henderson. His last stint at Teppo progressed him further toward the cult status he now enjoys.

If he’s not practicing his art, he’ll be riding his motorcycle or keeping up with Buick and Stanley, his two Siberian Huskies.

Operations Director

Geri Schorlemer

Geri, originally from Kansas City, MO, began her journey in the restaurant industry as a bartender while working her way through college.  
 
After moving to Dallas she worked as a trainer for Brinker International opening On the Border’s and eatZi’s across the country.  
For the past 13 years, Geri has been working alongside Lynae and Tracy helping build Far Hospitality.   
Currently residing in Dallas with her husband, Mark, daughter Hailey, and their two beloved dogs.

General Manager

Janet Beckstein

I have spent my whole life in the food and beverage industry.

I worked as a General Manager for stand-alone restaurants for 12 years on the Island of Maui before going into Hotel Restaurant Management.

I moved my whole family to Dallas while working for the Fairmont Hotel.

After 20 years with the hotel COVID happened and I came to work for Tracy and Lynae as General Manager since 2020.

Chef

James Marlow

Chef James was born and raised a Texan and is a local to the DFW area. He grew up in Frisco and later moved to Oklahoma for college where he met his loving wife at OSU. They later moved to Rehoboth Beach, Delaware for a few years to pursue their careers.

Chef James honed his skills in several cuisines while employed by Big Fish Hospitality Group. Once COVID hit the Mid-Atlantic region, his family relocated back to Dallas where he went on to work with Major Food Group and FAR Hospitality.

He continues to share his passion for food through his creations and challenges those around him to expand their palettes.
